Pass the Post-It notes

I discovered a new method of boiling eggs as I prepared potato salad for guests on July 4.

While chopping stuff up, I remembered I needed to add eggs, so I put a pot of water on the stove and put the lid on it.  I continued working until I heard the water boil, at which time I knew it was time to add the eggs and made a mental note of the time on the clock.  I chopped my celery and onions; did a taste test; added relish and mayo; did a taste test; added salt and pepper; did a taste test, and so it went.

After about 30 minutes,  I turned the fire off under the pan and returned to tasting mixing the potato salad.  When I had everything just right, I remembered that I needed to add the freshly boiled eggs.  Thinking it had been long enough for the eggs to cool, I carried the pan to the sink and removed the lid.

Apparently, I had boiled water for 30 minutes, patiently let it cool, but never added the damn eggs.  🙄

LOL, sounds like something I’d do. So, did you re-boil those eggs?

Next time put the eggs in the pot with the water before you turn on the heat. Then all you have to remember (and this might be hard, I admit) is to set the timer for 10 minutes after the water begins to boil. Less cracking that way, too.

I had a similar experience with eggs this past weekend. My DH’s family reunion was on Saturday. Saturday morning I was preparing a cabbage salad and a peanut butter cookie bar recipe at the same time. I measured and set out all of the ingredients for each recipe on seperate counters. I figured that when there was down time in the prep of one, I could work on the other. Five minutes after I placed the jelly roll sized pan of the cookie bars in the oven I discovered 2 eggs on the counter with the cabbage salad ingredients. I checked the recipe…nope no eggs called for in the cabbage salad. I did wonder at the time why the dough for the cookie bars was sooooo stiff to spread in the pan. Needless to say, there were no peanut butter cookie bars at the reunion.
